Join us at Saltbox Barn, in the beautiful Skagit Valley on April 7th for the Inaugural River to Roots Community Dinner! This is a special meal highlighting local produce, Wild Copper River Salmon, Skagit Grains, and more. Upon arriving at the barn, you’ll have a glass of wine & an appetizer while you watch the sun set over the Fir Island farmland to the west. We will dine together, family-style in the barn, as the bluegrass music plays and the candles flicker. Throughout the meal you’ll hear from the people who have grown, caught, raised and crafted the items on the table. Our mission is to re-connect locals to the land and the origins of their food; and to honor the local farmers and food artisans who cultivate it. Appetizer: Grilled Breadfarm Crostini with assorted Spring vegetable purees, ricotta, radish, herbs, sea salt
Dinner: Roasted Drifters Fish Copper River Sockeye Salmon, Fennel Chimichurri, Roasted Boldly Grown Farm Vegetables, Skagit Buckwheat salad with local greens
Dessert: Sweet Pickled Rhubarb with pie crust Crumble and Preserved lemon cream
Drinks: Red Wine will be provided with Appetizers, and please BYO Alcohol otherwise.
